A proper trattoria in the centre of Bra
“Trattoria desgenata” is how we describe ourselves: Piedmontese for easy-going, no fuss. We are on Via Gianolio in Bra’s historic centre, a short walk from the church of Sant’Andrea. Bra is the home town of Slow Food and of Bra sausage, and the cooking starts right there: crudi braidesi, tajarin with sausage ragù, vitello tonnato, brandacujun.
The dining room is intimate: exposed-brick arches, dark wood panelling, decorative plates on the walls, rush-seat chairs and a hatch that opens onto the kitchen. The menu puts it plainly: “Every dish is made by us, except the bread and grissini.”
Besides the à la carte menu there are two set menus, served to the whole table: the Menù Gallinaccia (antipasti, a first course, dessert) and the Menù Degustazione, which adds a main course.
